It’s a time of the year that the whole world comes alive and, in our humble opinion, there are plenty of opportunities to bring salmon into the mix. With a little planning, preparation (and a good measure of inspiration) you and yours can easily make the most of some delicious salmon dishes. What’s more, a lot of these recipes can be prepped or even made in advance – so you can spend plenty of time with your loved ones.
First off, the big Easter lunch. Why not buck the trend of serving up the usual lamb or chicken and go for a beautiful piece of baked salmon? This recipe for creamy salmon, leek and potato bake might be just the ticket. It makes for a mouthwatering centrepiece and that crust of lemon and pine nut rounds off the overall texture with a satisfying crunch. Or perhaps you just want to kick things off on a good foot and make salmon the star of your starter. We’d suggest this simple, shareable grilled salmon and roast beetroot salad (don’t forget the spiced balsamic glaze for the pièce de résistance).
If you’ve found yourself gazing out the window at the lighter, brighter weather recently. You’re not alone. We’ve been thinking the same thing; picnic anyone? For us there are a few go-to ideas for an al fresco lunch in the nearest park… top of that list would have to be smoked salmon and asparagus quiche. It travels well in a tupperware, you can enjoy it cold and it tastes phenomenal. Then there’s our lemon ricotta tarts with smoked salmon. They’re unbelievably easy to put together and great finger food. Not to mention being full of show stopping flavour. What more could your picnic need? Well, ok then, perhaps a couple of sausage rolls. This Easter-ready recipe for spicy salmon and red pepper sausage rolls is an excellent option to have at your disposal. Or better yet, in your basket.
If you’re a parent who’s always looking for new ideas to entertain the kids, especially through the holidays, getting them involved in the kitchen is an excellent idea. Not only will they be (hopefully!) engaged and helping out – they’ll be picking up valuable skills and knowledge too. Why not try something like scrambled eggs and asparagus? Just a little smoked salmon goes a long way, plus it’s quick, easy and healthy. Not that you have to tell your kids that. In the mood to strike out on your own, sans-recipe? Buying seasonal ingredients is always a good way to shake up your repertoire with some different textures and flavours. Not only that but salmon is an excellent source of protein, the stuff that helps us build and maintain bone and muscle! So alongside the Easter eggs, head to your local supermarket’s chilled aisle for nutritious some Mowi goodness.
