Ingredients

  • Mowi raw Salmon – 2 packs
  • Orange – juice & zest of 1 orange for glaze + 1 orange for slicing
  • Dried cranberries – 30g
  • Salt & Pepper – to season
  • Ground allspice – ½ tsp
  • Gin – 60ml
  • Cranberry juice – 250ml
  • Ginger – finely chopped, small piece – (10g -12g)
  • Sugar – 3 tbsp (36g)
  • Fresh dill chopped – small bunch
  • Olive oil – 1 tbsp
Citrus rubbed salmon with spiced cranberry & gin glaze

Method

  1. In a sauce pan place the gin, cranberry juice, allspice, dried cranberries, orange juice, sugar, ¾ of the ginger,  and ¾ of the orange zest. Season with salt & pepper and bring to the boil.
  2. Reduce to a simmer and cook until the sauce becomes a syrupy constancy.
  3. While the sauce is cooking, slice the orange and lay flat on a greaseproof lined baking tray. Place the salmon on top of the sliced oranges and brush with olive oil. Season with salt & pepper then sprinkle over the remaining ginger and orange zest. Scatter over the chopped dill and place the salmon in a preheated oven (200C/180C fan/gas mark 6) and cook for 20 minutes or until the salmon is cooked through.
  4. Remove the salmon from the oven and drizzle over the spiced cranberry glaze.
