Salmon & Lemon Butter Marinade
Goes well with…

Ingredients:
- 250g unsalted butter (if you are using salted butter omit the salt from the recipe)
- Small bunch (1 tbsp) fresh dill – chopped
- A pinch of salt
- ½ tsp Cracked black pepper
- 1 clove garlic – crushed
- 1 lemon
- 1 orange
Method:
- Remove the butter from the fridge and leave for an hour to soften
- Cream the butter in a bowl. Add the rest of the ingredients to the butter and mix through
- Place the salmon portion onto a sheet of tin foil and top the salmon with a tbsp of butter. Wrap the salmon in the foil and place in the fridge until required.
- Place the foil wrapped salmon onto a medium grill for around 20 minutes or until the salmon is cooked. Halfway through the cooking time add some asparagus and half a lemon (brushed with olive oil) to the grill and serve alongside the salmon
- Any remaining butter can be rolled in to a log and frozen until needed (as per below method)
