Salmon & Lemon Butter Marinade

Mowi Scottish Salmon Fillets


  • 250g unsalted butter (if you are using salted butter omit the salt from the recipe)
  • Small bunch (1 tbsp) fresh dill – chopped
  • A pinch of salt
  • ½ tsp Cracked black pepper
  • 1 clove garlic – crushed
  • 1 lemon
  • 1 orange


  1. Remove the butter from the fridge and leave for an hour to soften
  2. Cream the butter in a bowl. Add the rest of the ingredients to the butter and mix through
  3. Place the salmon portion onto a sheet of tin foil and top the salmon with a tbsp of butter. Wrap the salmon in the foil and place in the fridge until required.
  4. Place the foil wrapped salmon onto a medium grill for around 20 minutes or until the salmon is cooked. Halfway through the cooking time add some asparagus and half a lemon (brushed with olive oil) to the grill and serve alongside the salmon
  5. Any remaining butter can be rolled in to a log and frozen until needed (as per below method)
