Tomato Salsa Marinade

Goes well with…

Mowi Scottish Salmon Fillets


  • 4-5 (200g) Large ripe vine tomatoes – quarter remove seeds from the tomatoes and dice (leave the seeds in if you want a wetter salsa)
  • ½ Red onion – finely chopped
  • 1 Mild chilli deseeded (optional)
  • A pinch (2g) of Salt
  • A pinch (2g) of Caster sugar
  • 1 Lime
  • 10g Fresh coriander – chopped
  • 1 clove of garlic – crushed


  1. In a bowl mix all the ingredients together, cover and place in the fridge for 1 hour (this lets the flavours balance out)
  2. Before serving taste and adjust the seasoning if needed
  3. For another alternative add black beans, diced red peppers and sweetcorn to the salsa
