Ingredients

  • 4 slices of MOWI Rich smoked salmon slices
  • 1 tbsp of beetroot juice (concentrated)
  • A handful of chopped dill
  • ½ lemon (juiced)
  • 1 spoon sugar
  • ¼ red onion (diced)
  • ½ bulb of fennel
  • 1 sliced apple
  • A few capers
  • 2 pickled beetroots (sliced)
Salmon carpaccio

Method

  1. Marinate the smoked salmon slices with the lemon juice, sugar, salt and beet concentrate and leave for a few hours.
  2. Cut the apples into cubes along with the dill, sliced beetroot and fennel.
  3. Once marinaded, remove the fish and add it to the top of the prepared ingredients. Sprinkle over dill and capers.
