Lemon butter salmon pasta

Our lemon butter salmon pasta recipe proves that you can’t overlook the simple dishes when you’re in search of flavour. Serve up a salmon fillet marinaded in lemon butter with fresh pasta for an indulgent meal.

Preparation

  1. Remove the butter from the fridge and leave for an hour to soften
  2. Cream the butter in a bowl. Add the rest of the ingredients to the butter and mix through
  3. Place the salmon portion onto a sheet of tin foil and top the salmon with a tbsp of butter. Wrap the salmon in the foil and place in the fridge until required.
  4. Place the foil wrapped salmon onto a medium grill for around 20 minutes or until the salmon is cooked. Halfway through the cooking time add some asparagus and half a lemon (brushed with olive oil) to the grill
  5. Boil fresh pasta for around 3 minutes (check the instructions on pack if store bought), add the asparagus and salmon and serve
  6. Any remaining butter can be rolled in to a log and frozen until needed (as per below method)
