Spinach pancakes with smoked salmon and ricotta

Preparation

  1. In a bowl, mix the flour, baking powder and salt.
  2. Put the spinach in a blender with a little milk and blend. Add the egg, the rest of the milk, the flour mixture, the olive oil and mix again.
  3. Heat a little oil in a frying pan over a medium-low heat (it is important that the pan is not too hot otherwise the pancakes will lose their vibrant green colour) and form the pancakes.
  4. Cook for 1 minute on each side (when lots of small bubbles appear on the pancake, it must be turned over).
  5. Serve the pancakes with ricotta, MOWI Smoked Salmon Slices and pomegranate seeds to garnish
