- In a bowl, mix the flour, baking powder and salt.
- Put the spinach in a blender with a little milk and blend. Add the egg, the rest of the milk, the flour mixture, the olive oil and mix again.
- Heat a little oil in a frying pan over a medium-low heat (it is important that the pan is not too hot otherwise the pancakes will lose their vibrant green colour) and form the pancakes.
- Cook for 1 minute on each side (when lots of small bubbles appear on the pancake, it must be turned over).
- Serve the pancakes with ricotta, MOWI Smoked Salmon Slices and pomegranate seeds to garnish
