Ingredients

Citrus Butter

  • Unsalted butter or if you are using salted butter omit the salt from the recipe – 250g
  • Dill – chopped – 1 tbsp
  • Salt – Pinch
  • Freshly ground black pepper – Pinch
  • Garlic – crushed – 1 Clove
  • Lemon – juice and zest – ½ Lemon
  • Orange – juice and zest – ½ Orange

Garlic Butter

  • Unsalted butter or if you are using salted butter omit the salt from the recipe – 250g
  • Flat leaf parsley – chopped – small handful
  • Salt – pinch
  • Freshly ground black pepper – 1/2 tsp
  • Garlic – crushed – 2 cloves
  • lemon – juice and zest – ½ lemon

Method 

Citrus Butter

  1. Remove the butter from the fridge and leave to soften
  2. Place the butter into a bowl or place into a food processor and mix until soft. Add the orange and lemon juice to the butter and mix well until the liquid is well incorporated into the butter (Keep mixing until you can’t see any liquid).
  3. Add the rest of the ingredients to the butter and fold through (or pulse in if using a food processor).
  4. Place the butter onto the bottom edge of a square sheet of baking parchment or cling film and roll it into a compact cylinder or log shape. Twist the ends to seal. The butter can be stored for up to 3 days in the fridge or up to a month in the freezer.

 

Garlic Butter
