- Cut each slice of salmon into quarters. Scrunch up the salmon pieces into “s” shapes and thread 3 pieces on to 10 short skewers along with cucumber and strawberry halves. Cover and chill until ready to serve.
- Just before serving, blitz the remaining strawberries with the Pimms and orange rind until smooth. Taste and sweeten with honey if desired. Serve as a dressing to accompany the skewers.
TIP: If you prefer not to use Pimms, replace with freshly squeezed orange juice instead. Thread the ingredients on to 4-6 long skewers to make a colourful and light starter to a summer barbecue supper or lunch.
For a more informal starter or salad, serve MOWI smoked salmon slices with a combination of fresh Summer berries (raspberries, blueberries, strawberries), diced cucumber and baby salad leaves. Serve with the dressing and sprinkle with fresh basil or dill.
