Pimms cocktail salmon skewers

Preparation

  1. Cut each slice of salmon into quarters. Scrunch up the salmon pieces into “s” shapes and thread 3 pieces on to 10 short skewers along with cucumber and strawberry halves. Cover and chill until ready to serve.
  2. Just before serving, blitz the remaining strawberries with the Pimms and orange rind until smooth. Taste and sweeten with honey if desired. Serve as a dressing to accompany the skewers.

TIP: If you prefer not to use Pimms, replace with freshly squeezed orange juice instead. Thread the ingredients on to 4-6 long skewers to make a colourful and light starter to a summer barbecue supper or lunch.

For a more informal starter or salad, serve MOWI smoked salmon slices with a combination of fresh Summer berries (raspberries, blueberries, strawberries), diced cucumber and baby salad leaves. Serve with the dressing and sprinkle with fresh basil or dill.
