  • Mowi Piri Piri Salmon – 1 pack
  • Orzo Pasta – 200g
  • Roasted Peppers – Cut into Strips – 150g
  • Vine Cherry Tomatoes – Cut into Half – 6
  • Kalamata Olives – Stoned and torn in half – 50g
  • Baby Capers – 3 tsp
  • Rocket – Optional

Harissa & lime dressing

  • Harissa Paste – 2-3 tsp depending on how hot you like your food
  • Lime Juice – 1 Lime
  • Olive oil – 3 tbsp
  • Sugar – Pinch
  • Salt & Cracked Black Pepper – to season

 

Slow Roasted Salmon & Orzo Pasta Salad with Roast Peppers & Harissa & lime dressing

Method

  1. Cook the orzo according to the packs instructions. Drain and rinse the pasta under cold running water until the pasta is cold. Drain well
  2. Place the pasta into a bowl and add the tomatoes, capers, olives, peppers.
  3. Pour over the dressing and toss together. Place into a dish
  4. Remove the skin from the salmon and flake into large chunks. Scatter the salmon over the salad
  5. Serve with a rocket salad

Harissa & lime dressing

  1. Place all the ingredients together and mix well
