Slow Roasted Salmon & Orzo Pasta Salad with Roast Peppers & Harissa & lime dressing

Ingredients
- Mowi Piri Piri Salmon – 1 pack
- Orzo Pasta – 200g
- Roasted Peppers – Cut into Strips – 150g
- Vine Cherry Tomatoes – Cut into Half – 6
- Kalamata Olives – Stoned and torn in half – 50g
- Baby Capers – 3 tsp
- Rocket – Optional
Harissa & lime dressing
- Harissa Paste – 2-3 tsp depending on how hot you like your food
- Lime Juice – 1 Lime
- Olive oil – 3 tbsp
- Sugar – Pinch
- Salt & Cracked Black Pepper – to season

Method
- Cook the orzo according to the packs instructions. Drain and rinse the pasta under cold running water until the pasta is cold. Drain well
- Place the pasta into a bowl and add the tomatoes, capers, olives, peppers.
- Pour over the dressing and toss together. Place into a dish
- Remove the skin from the salmon and flake into large chunks. Scatter the salmon over the salad
- Serve with a rocket salad
Harissa & lime dressing
- Place all the ingredients together and mix well
